When we think of pancakes in my country we think of crepes.Soft and chewy crepes that are a perfect base for any sweet or savory filling, ready in only 30 minutes.Mmm, I love them sweet with chocolate spread and banana, savory with cheese and ham, mushrooms… the combinations are endless but whatever you choose the recipe is the same, the final presentation is up to you.So let’s get started.
Instructions
- With a hand mixer beat the eggs on high speed with the salt and sugar for about one minute.Pour the milk, water, and sparkling water(or water with soda) and beat to combine on lowest speed.
- Now, gradually add the flour, a tablespoon at a time and continue mixing with the mixer.the batter should be smooth and thick, not too thick.To test it take big spoon for soup, scoop and pour in the batter with a 10 cm high it should make a line with no breaks.
- Let the mixture sit at room temperature for 15-30 minutes.
- Use a silicone brush to oil the nonstick pan heated over medium heat.Pour 1/2 cup of the batter and tilt the pan to coat the surface.Cook the crape for 1-2 minutes on both sides just to lightly golden.Place the crapes on a plate and repeat until all the batter is gone, not to forget to brush every time before you add the batter.
