Summer is my favorite season…shh I`m lying 😀 spring is my favorite, but for the star of the recipe, we have to give it credit.And yes peaches are the star of the summer, and what kind of summer will this be without peach pie with a vanilla ice cream to refresh yourself in these hot days…
All you need are some peaches and flour,butter..err Ok maybe something more or less..but you won`t regret it!

Ingredients
Pie Crust
- 2 1/2 cups All purpose flour
- 2/3 cup cold butter cut in pieces
- 2-3 tablespoons cold water
- 3 tablespoons sugar
- pinch of salt
Peach Filling
- 4 cups fresh peaches pealed and sliced
- 3/4 cup granulated sugar
- 2 tablespoons butter
- 1 teaspoon cinnamon
- 1 teaspoon rum extract optional
- 1 tablespoon lemon juice

Pie crust
- For the pie crust, in a bowl add in all the ingredients except the water. Work with a fork or with your hands to form crumbs.Start adding the water just to combine.Press and work the dough to create a ball for few minutes.Cover with plastic wrap and put in the fridge to rest for 15 minutes.
Peach filling
- In a saucepan add in the peaches and the other ingredients. Stir on a medium low heat to caramelize the peaches, about 10-12 minutes.
Pie
- Divide the crust into two balls. Grease the pie pan with butter and add in half of the dough previously rolled in the pan size. Seal the edges.
- Pour in the peach filling. Make strips with the rest of the crust and cover the peaches to form lattice top crust.
- Bake the pie in the preheated oven to 190°C or 375°F for 35-40 minutes.
Recipe Notes
- Although is optional I recommend you to use the rum extract, as it brings this pie to another level, and accent the peach flavor even better!
