Yesterday, my mother and I were visiting my grandma, because in September and October we are preparing our traditional winter Relish.Soon I will be posting a whole category with our traditional recipes for Relish.My grandma garden was full of green peppers…so I end up home with a massive amount of peppers.
Then I prepared this warm dish that can be a perfect dinner or an appetizer.
Easy to prepare, you can also involve your kids cause this isn’t any fancy meal, so the mess is a part of the whole process.
Instructions
- Start with removing the top of the peppers, cut vertically on one side of the pepper to easily remove the seeds, and the peppers are ready for stuffing.
- In a bowl add in the feta cheese, mesh it with a fork, then add in the tomatoes, eggs and the oil, oregano, salt, and pepper.Mix well to combine.
- Stuff the peppers with a spoon and put into an oiled pan, with the cut side up. Add in the remaining filing between the peppers.
- Bake in the preheated oven at 200°C or 400°F for about 40 -50 minutes. The baking time may vary depending on your oven so check them after 20 minutes.
