You know that your life will be easier if you have just one, and onlyyy one muffin recipe that can handle any extra added ingredient for flavor, like fruits, nuts or chocolate.Whatever you choose, it will only enhance the goodness of this amazing muffin recipe.
Instructions
- In a large bowl, first, add your dry ingredients.
- Then add in the melted butter, buttermilk, and eggs one at a time, continue mixing with the spatula. Last, add the vanilla and stir just to combine. Now your basic batter is ready to use.
- Fill in your muffin liners with the batter all the way to the top and bake your muffins for 15 minutes at 200°C or 400°F, then lower the heat to 150°C or 350°F and bake them for additional 15 -20 minutes.
- To check the muffins insert a toothpick in the center of the muffin - should come out clean. Take the muffins out of the pan and let them cool.
Recipe Notes
- I divided the batter among three bowls and added in raspberries and white chocolate in the first, chocolate chips and pinch of cinnamon in the second, and my absolute favorite lemon zest and blueberries in the last one.
- You can always use just one flavor, just make sure you add one teaspoon of flour to the ingredients before adding to the batter so they don`t sink to the bottom of the muffins.
- If you want your muffins flat to the top fill in 3/4 of the liners, and adjust the baking time, check them after 20 minutes!
